This is a fresh tasting salad for the wintertime, when greens are harder to come by locally. Adapted from "Sundays at Moosewood Restaurant"
1 cup peeled and grated raw rutabaga
1 cup peeled and grated apple
1/2 cup chopped fresh parsley
juice of 1 large lemon
1 tbsp vegetable oil
Salt and pepper
Combine everything! Chill. Eat!
